Using a hand mixer, blend together rotel, velveeta, and sausage. Place into oven-safe bowl and bake for 15 minutes or until golden brown on top. Enjoy! Jalapeno poppers: Preheat oven to 350 degrees. Soften cream cheese to room temperature. Dice 2 jalapenos into small bits, being careful to remove the seeds. Sautee diced halapeno with onion in a small pan until soft. De-seed remainder of jalapenos and cut in half to create small ‘bowls.’ Using hand mixer, blend cream cheese, sautéed jalapeno bits/onions, spices, and cheddar cheese in a bowl. Take spoonfuls of cream cheese mixture and place into jalapeno halves. Wrap one slice of turkey bacon around each jalapeno halve. Place in oven for 20 minutes or until turkey is brown and crispy.
