This pie is a small holiday obsession of mine, and it is so easy to make! If you're bored with pecan pie and want to spice up the Thanksgiving dessert spread, give this recipe a try.
Here's what you're going to need:
1 pre-made frozen pie crust
½ cup butter
½ cup packed brown sugar
¾ cup corn syrup
1/8 teaspoon salt
1 teaspoon vanilla
3 eggs, lightly beaten
4 crushed up Nature Valley Oats ‘n Honey crunchy granola bars (2 pouches)
½ cup chopped pecans
¼ cup old fashioned oats
¼ cup semi-sweet or milk chocolate chips (I prefer milk chocolate
Here's what you need to do:
1. Heat oven to 350 degrees F.
2. In large microwavable bowl, microwave butter until melted. Stir in brown sugar and corn syrup until blended. Beat in salt, vanilla and eggs. Stir crushed granola bars, pecans, oats and chocolate chips into brown sugar mixture (this year we are also adding ¼ cup Heath toffee bits too!). Pour mixture into pre-made crust.
3. Bake 40 to 50 minutes or until filling is set and crust is golden brown. During the last 15 to 20 minutes of baking, cover crust edge with strips of foil to prevent excessive browning. Cool at least 30 minutes before serving. Serve warm, at room temperature, or chilled with whipped cream or ice cream. Cover and refrigerate any remaining pie.
